If you've been following my blog recently you know I've been Following the "No Sugar, No Grains" (NSNG) diet. if you want to learn more about NSNG read this book.
So one of the BIG hurdles I've been trying to address since starting NSNG is "what can i snack on"? One item that Trish and I have stumbled upon is Home made Plantain Banana Chips! The only ingredients used: Plantain Bananas, Olive Oil, Pepper and seasoning (optional).
These things are delicious, of course its best to consume in moderation but these are so easy and cheap to make that it is a perfect replacement for store bought chips. Now it took a little trial and error. Our first batch we tried we sliced with a knife, which did not work. For one it took way too long. If we had to cut it by hand each time we probably would not bother. Secondly, when we cut by hand the chips were way to thick and got all soggy very quick.
We stumbled upon one of the most handy little kitchen tools I've found in a long time, this hand held veggie slicer. This was such a huge time saver, we sliced an entire batch in minutes and they were all perfectly thin and uniform, like a store bought bag. I highly recommend checking it out, if you click the picture below you can check it out.
Once we sliced them, we tossed them with Olive Oil, added some pepper and baked at 375 for 20 minutes (flipping at 10 minute mark). Hope you guys enjoy this snack idea, it's a regular in our snack rotation these days!
More NSNG meal and snack ideas coming soon!
